INGREDIENTS
- 1 Tex-Mex Pulled Jackfruit 10 oz. package
- 4 Bell Peppers (any color)
- ½ Cup shredded plant-based cheese
- Cilantro, chopped
- Vegetable Oil
- Salt and pepper
DIRECTIONS
- Prepare Tex-Mex Pulled Jackfruit using instructions on package.
- Once the Tex-Mex Pulled Jackfruit is prepared, preheat oven to 350 F degrees.
- Cut bell peppers in half lengthwise. Scoop out the seeds with a small spoon.
- Place on a lined baking sheet cut side up and scoop cooked Tex-Mex Pulled Jackfruit into each bell pepper & bake for 15 minutes.
- Sprinkle with shredded cheese of your choice & return to the oven and bake for another 2 minutes, until warmed through and cheese is golden brown and melted.
- Top with cilantro and serve.
