BBQ JACKFRUIT MINI TACOS

A new way to barbecue!

INGREDIENTS

  • 1 BBQ Pulled Jackfruit 10 oz. package
  • Coleslaw
    • 1/2 cup mayonnaise – sub with vegan mayo
    • 1/2 cup Mexican crema – sub with vegan crema
    • 4 limes juiced
    • 4 tbsp. cilantro chopped
    • 2 tbsp. honey or 3 tbsp. sugar
    • 4 cups green cabbage shredded
  • Chipotle Hot Sauce
  • Mini Tacos Shells or street taco tortillas
  • Chopped cilantro
  • Diced red onion
  • Sliced jalapeños
  • Lime slices

DIRECTIONS

  1. Combine the mayo, crema, lime juice, chopped cilantro, and honey into a small bowl and mix thoroughly. Combine with the shredded cabbage and set aside.
  2. Heat a nonstick skillet over medium heat. Add BBQ Jackfruit and cook for 5 minutes, stirring frequently. If you want to spice up your tacos, add a few dashes of chipotle hot sauce.
  3. Using a gas stove, turn a large burner to medium low heat. Working one at a time with tongs, place a tortilla directly over the flame, lightly charing each side. Continue with the remaining tortillas. (Alternatively, use a skillet on an electric stove or cover tortillas with a damp paper towel and microwave in 30 second increments.)
  4. Transfer BBQ Jackfruit to a bowl.
  5. Divide BBQ Jackfruit over tortillas and top with coleslaw and other garnishes like cilantro, red onion, jalapeños, a squeeze of lime or more hot sauce.
