INGREDIENTS
- 1 BBQ Pulled Jackfruit 10 oz. package
- 2 flour tortillas
- ⅓ cup vegan shredded cheese
- ¼ cup black beans, drained and rinsed
- 1 tbsp diced red onion
- ¼ tsp crushed red pepper flakes
- Cilantro, chopped
DIRECTIONS
- Heat a large skillet over medium heat. Place BBQ Pulled Jackfruit in a bowl and shred with two forks.
- Add one tortilla to the skillet and add half of the cheese, all of the jackfruit, black beans, red onion, red pepper flakes and cilantro.
- Top with the remaining cheese and the second tortilla. Press with spatula.
- Let quesadilla cook until one side is golden brown. Carefully flip to the other side until also golden.
- Cut into wedges and serve with your favorite dip, like guacamole, BBQ sauce or pico de gallo.
