BBQ JACKFRUIT QUESADILLAS

An easy, tasty, and totally meatless weeknight meal

INGREDIENTS

  • 1 BBQ Pulled Jackfruit 10 oz. package
  • 2 flour tortillas
  • ⅓ cup  vegan shredded cheese
  • ¼ cup black beans, drained and rinsed
  • 1 tbsp diced red onion
  • ¼ tsp crushed red pepper flakes
  • Cilantro, chopped

DIRECTIONS

  1. Heat a large skillet over medium heat. Place BBQ Pulled Jackfruit in a bowl and shred with two forks.
  2. Add one tortilla to the skillet and add half of the cheese, all of the jackfruit, black beans, red onion, red pepper flakes and cilantro.
  3. Top with the remaining cheese and the second tortilla. Press with spatula.
  4. Let quesadilla cook until one side is golden brown. Carefully flip to the other side until also golden.
  5. Cut into wedges and serve with your favorite dip, like guacamole, BBQ sauce or pico de gallo.
