INGREDIENTS
- 1 BBQ Pulled Jackfruit 10 oz. package
- 12 oz pitted Medjool dates
- 4 oz plant-based goat cheese
- ¼ cup pomegranate arils (seeds)
- Salt and pepper
DIRECTIONS
- Preheat the oven to 350F.
- In a bowl using two forks, shred the BBQ Pulled Jackfruit into small pieces.
- Line the dates on a parchment lined baking sheet. Slice open each date and stuff with a small spoonful of cheese. Top with shredded BBQ Pulled Jackfruit.
- Bake for 5-10 minutes, until cheese softens and jackfruit begins to crisp.
- Remove from oven and season with salt and pepper. Sprinkle liberally with pomegranate arils.
- Serve with toothpicks and, if desired, extra barbecue sauce for dipping. Enjoy!
