Crushed tortilla chips
With the tortilla on a cutting board, cut from the center down to the edge one time. Divide the fillings into four even quadrants.
Starting at the lower left quarter, fold up, then right, then down until you have completely folded the tortilla into a triangle.
Heat butter or oil in a skillet over medium low heat. Add the folded tortilla and grill for 3 minutes. Carefully flip and grill for another 3-4 minutes until the outside is golden brown and crispy and the cheese has melted.
