Plant-Based Pulled Pork Stuffed Dates

INGREDIENTS

1 Package Plant-Based Pulled Pork from The Jackfruit Company

15 Pitted Medjool dates

¼ c of your favorite nut-based “goat cheese”

¼ c walnuts, roughly chopped 

2 T olive oil

1 T maple syrup

Balsamic reduction

Flaky salt

INSTRUCTIONS

Preheat your oven to 350°F.

Heat oil in a nonstick skillet over medium-high heat. When hot, add Plant-Based Pulled Pork and season with salt. Cook for a minute, stirring continuously. Turn heat to low and add maple syrup, continuing to stir. Cook until jackfruit begins to caramelize. 

Remove jackfruit from heat and transfer to a bowl. Using two forks, tear into smaller pieces.

Place pitted dates on a lined baking sheet and fill date each with 1/4 teaspoon cheese and smoked jackfruit. Top with chopped walnuts.

Bake in the oven for 10-15 minutes.

Remove from oven. Drizzle with balsamic reduction and lightly sprinkle with salt. Best served warm or at room temperature.
