Seven-Layer Tex-Mex Scoops

Your fave party snack, with a jackfruit twist.


1 package Tex-Mex Jackfruit, shredded

1 bag scoop tortilla chips

1 (16 ounce) can refried beans

1 cup guacamole (or mashed avocados)

1 cup salsa

1 cup shredded Mexican cheese blend or vegan cheddar style

1/2 cup diced roma tomatoes

1/2 cup sliced green onions



Preheat oven to 350 ºF.

On a baking sheet, spread tortilla scoops out evenly. Spoon a teaspoon of refried beans onto each chip and top with shredded cheese. Top each chip with a spoonful of shredded Tex-Mex jackfruit. (Tip: We like to shred it in a bowl using two forks first.) Bake for 10 minutes.

Spoon in guacamole, salsa, tomato and top with green onion. Enjoy!
