Jamaican Jerk Jackfruit Bowl

Add a taste of the tropics to your weeknight routine.

INGREDIENTS:

½ cup The Jackfruit Company Lightly Seasoned Jackfruit Meal Starter

1 T Jamaican Jerk seasoning

⅓ c black beans, drained and rinsed

¼ c red onion, diced

¼ c pineapple, diced

2 T cilantro, roughly chopped

1 lime, cut into wedges

½ c cooked rice or other grain

Cooking oil

Salt

 

INSTRUCTIONS

In a medium skillet, heat 1 tablespoon of cooking oil. Add Lightly Seasoned Jackfruit and Jamaican Jerk seasoning until it starts to crisp on the outside.

While jackfruit cooks, combine black beans, red onion, pineapple and cilantro in a small bowl. Add a large squeeze from one lime wedge. Add salt to taste and stir to combine.

Place cooked rice in a bowl. Add black bean pineapple salsa and top with seasoned jackfruit. Garnish with additional cilantro and lime wedges. Serve.
