1 package Lightly Seasoned Jackfruit Meal Starter from The Jackfruit Company
4 oz rice noodles
1 cup cucumbers, thinly sliced
½ cup carrots, sliced into matchsticks
¼ c green onion tops, thinly sliced diagonally
½ c peanut sauce
Cilantro, stems removed and roughly chopped
Peanuts, roughly chopped
Lime wedges for serving
Prepare the rice noodles according to package directions.
In a skillet over medium heat, add Lightly Seasoned Jackfruit and ¼ c peanut sauce. Stir to combine and saute for 5 minutes. Remove from heat and using two forks, shred any larger pieces.
Divide rice noodles, jackfruit, cucumbers, carrots and green onions evenly into two bowls. Garnish with cilantro and peanuts. Drizzle over the remaining peanut sauce and serve with lime wedges. Enjoy!
