Jackfruit Masala Stuffed Sweet Potatoes

An easy, delicious way to spice up your pantry staples.

INGREDIENTS

1 Package Chickpeas + Spinach + Garam Masala Jackfruit Meal from The Jackfruit Company 

2 medium sweet potatoes

½ c dairy-free coconut yogurt

¼ tsp cumin

½ tsp garam masala

¼ c finely chopped cucumber (seedless or seeds removed)

¼ c fresh cilantro, finely chopped

Lemon

Salt

INSTRUCTIONS

Preheat oven to 400° F and line a rimmed baking sheet with parchment paper.

Place clean, dry sweet potatoes on the prepared baking sheet and poke holes all over with a fork. Roast for 40 minutes to 1 hour, until pierced easily with a knife (cooking times will vary based on size of potatoes).

In a small bowl, whisk the yogurt and add cumin and half of the garam masala. Mix in cucumbers, one tablespoon cilantro and a squeeze of fresh lemon. Taste and add salt if desired. Cover and chill until ready to serve. 

Remove cooked sweet potatoes from the oven and let cool.

While potatoes cool, prepare your Complete Jackfruit Meal. On a stovetop, pour contents of the pouch into pan and heat on medium for 3-5 minutes until hot (alternatively, tear pouch 2” to vent and heat in microwave on high for 1 minute). 

Slice open the potatoes and fill each with the prepared Jackfruit Meal. Top with yogurt mixture, chopped cilantro and a sprinkle of remaining garam masala to taste.
