Jackfruit Coconut Ice Cream

I scream, you scream, we all scream for jackfruit!



10-12 Frozen Ripe Jackfruit pods

1 14 oz can coconut cream

1 Tbsp vanilla extract


In a blender or food processor, combine frozen jackfruit, coconut cream and vanilla extract. Blend ingredients well until thick and creamy. Pour into a freezer-safe container, cover and freeze for 1-2 hours or until the ice cream has reached your desired consistency. Serve scooped into a bowl or cone, and enjoy on a hot summer’s day!
