Jackfruit Chia Pudding

The most delicious way to celebrate National Chia Day (or any day!)

INGREDIENTS:

½ cup coconut milk

1 ½ tbsp chia seeds

¼ tsp vanilla

1 tsp brown sugar

¼ cup ripe jackfruit, chopped

 

INSTRUCTIONS:

 

Mix coconut milk, chia seeds, vanilla and brown sugar in a sealable container. Let set in the refrigerator for at least a few hours (preferably overnight), periodically stirring.

Remove from the fridge, give it a good stir to break up any clumps, top with chopped Ripe Jackfruit and enjoy!
