Jackfruit Baked Potato Bar

2-6 Russet potatoes

Salt and pepper

Olive oil

Sour cream or Greek yogurt

INSTRUCTIONS

Preheat oven to 500 F. Poke potatoes all over with a fork. Drizzle each potato with oil and rub to cover in a light layer. Season with salt and pepper. Place potatoes directly on the oven rack or on a cooling rack that fits inside a rimmed baking sheet. Bake for 60-70 minutes or until cooked all the way through. 

While the potatoes bake, cook jackfruit of your choice according to package directions. Prepare the rest of your toppings as needed.

Remove potatoes from the oven and slice open just before serving alongside your toppings.
