Curried Jackfruit Salad Sandwich

A plant-based take on a picnic classic!

INGREDIENTS:

 

1 cup Lightly Seasoned Jackfruit

¼ cup mayonnaise or vegan mayo of choice

⅓ cup celery, diced

¼ cup green onion, thinly sliced

½ tsp curry powder

Spinach (optional)

Salt and pepper to taste

Bread or lettuce cups

 

INSTRUCTIONS:

 

Combine first 5 ingredients in a small bowl. Add salt and pepper to taste.

If using bread for the sandwich, add spinach leaves to one side before topping with the curried jackfruit salad. If using lettuce cups, you can opt to skip the spinach (or not, and double up on the leafy greens!) Enjoy!
