1 package BBQ Jackfruit from The Jackfruit Company
12 oz pitted Medjool dates
4 oz plant-based goat cheese
¼ c pomegranate arils (seeds)
Salt and pepper
Preheat the oven to 350F.
In a bowl using two forks, shred the BBQ Jackfruit into small pieces.
Line the dates on a parchment lined baking sheet. Slice open each date and stuff with a small spoonful of cheese. Top with shredded jackfruit. Bake for 5-10 minutes, until cheese softens and jackfruit begins to crisp.
Remove from oven and season with salt and pepper. Sprinkle liberally with pomegranate arils. Serve with toothpicks and, if desired, extra barbecue sauce for dipping. Enjoy!
