Jackfruit-LT Sandwich

Move over, BLT. The JLT is here—and it's delicious.

SERVINGS:

Makes 2 sandwiches.

INGREDIENTS:

1 cup Smoked Pulled Jackfruit, pulled into small pieces

4 slices bread of your choice

4 leaves iceberg lettuce

4 thick slices of ripened tomato

4 tsp vegan mayonnaise 

1 tbsp olive oil

INSTRUCTIONS:

Preheat the oven to 400 degrees. Place Smoked Jackfruit on a lined baking sheet and toss with olive oil. Bake for 10 minutes or until crisp. For extra crispy jackfruit, briefly broil on high at the end.

While the jackfruit bakes in the oven, toast bread slices. 

To assemble, spread mayo on each slice of bread, add two sliced tomatoes, ½ cup Smoked Jackfruit, iceberg lettuce and finish with the final slice of bread. Slice in half and enjoy!
